Fresh Loaf of Bread...

Been trying to get that fresh-out-of-oven bread.. and it doesnt always turn out right.. but this one got me 4 stars out of 5 from hubby dearest.. :)

You need:

700 gms plain white flour
1  tbls - or less - salt
1 tsp yeast - instant
1 tsp sugar
around 400 ml warm water
egg wash with one egg and some warm water
sesame seeds

This is what you should do:

1- put the flour in a baking tin and let it warm up in the oven. Turn the oven off after 10 minutes and remove

2- add in all ingredients plus the water to the flour and mix - either by hand or in machine

3- the dough should be slightly sticky, so if it is too dry, add some more water, spoonwise

4- turn it over to a floured surface and knead well by hand for at least 5 to 7 minutes

5- spray cling film with oil, put the dough in a bowl, cover with the film and set it in a warm place to rise - at least 2 hours

6- remove, punch down gently, form by pulling it flat and rolling up.. and place the loaf in a well buttered tin, cover it again and let it rise again till it is well to the edge

7- DO NOT punch it down! Brush with egg wash, sprinkle with seeds and pop in a warm oven, preheated at least 10 minutes before. Place a tray full of water at the base of the oven. The boiling of that water will make steam, giving your bread a crispy crust..

8- bake for 30 to 40 minutes - remove from tin and knock on the base. It should sound hollow.. turn it over and place it back in the tin - upside down.. so that the sides and bottom get crisp too..

9- let it cool a bit before cutting.. and then lather it with salted butter and all those goodies that taste so good on oven fresh bread :)
