Healthy Sheesh Kabab

Api was telling me that these are called 'falscher Hase' in German.. how small the world is! We all experiment with things - ingredients and food stuff.. and somehow, it all ends up almost similar. Anyway, this is my version of "what-to-do-with-extra-veggies-kabab" :)

You need:

1/2 kilo mince meat
1/2 cup bread crumbs
1/4 cup flour
1 small carrot, grated
1 small green paprika, grated
1 small potato, grated
1 medium onion, yet again, grated :)
1 small piece of ginger, finely chopped, and 3 cloves garlic, crushed
1 egg
1/2 bunch of fresh coriander, roughly chopped

1 full tsp ground coriander and cumin each
1 level tsp black pepper
1 level tsp salt, or as per your taste
1/2 tsp garam masala
1/4 tsp red chili - optional

This is what you need to do:

1- process the mince twice in the processor so it is really fine, yet not a paste. If your mince meat is already finely minced, then just once. You want it fine, not paste-like

2- fry the veggies in very little - preferably olive - oil, so they get soft

3- let them cool down a bit, and then add them, the egg, the spices, coriander, the breadcrumbs and flour to the meat

4- the mince should be dry yet moist enough to form. If it does seem to dry, add a tablespoon yoghurt. But it shouldn't be, really

5- let the mince rest for at least half an hour, an hour is better. Form your kababs, where you can do as you wish - sheesh, burgers, round kababs.. anything..

6- again, let them rest for 10 to 15 minutes. Then shallow fry.. and serve with whatever suits your fantasy :)
