Mince and Vegetable Rice Pot

Dont have a name for it, so have just explained what it is. Name suggestions welcome!

This is what you need:

Spices:
1 level tsp salt
1 heaped tsp sumac
1 heaped tsp dhania
1 heaped tsp zeera
1 tsp black pepper
1/2 tsp garam masala
1/2 tsp curry powder
1/4 tsp black salt
2 heaped tblsp roasted besan

3 cups boiled rice
300 grms mince meat
1 tbls each adrak lehsan paste
2 large onions
a cup of fresh peas, frozen are ok too but fresh are best
a cup of boiled potatoes
6 boiled eggs
seeds of one small anar
a cup of skinned almonds, halved
2 cups of dahi
juice of 1 lemon mixed with food colour
fresh dhania
fried onions, optional
3-4 tbls ghee



This is what you do:

- mince the meat with the onions
- add all the spices and mix well
- make small shapes by just rolling them in the hands
- heat some ghee and fry them
- take out, set aside and fry the alus in the same oil
- if youre using onions, fry them next



- now the ghee should be very less... toss in the boiled shelled eggs and just brown them all round. The use of this is that they wont break that easily when in the rice
- tip half the rice in the pot
- spread the koftas on top
- sprinkle the almonds and peas and spread rice lightly over, just a little and dont do anything to the peas.. leave them as they are, they will cook in steam



- next the alus, anardana and another light spread of rice
- spread the dahi - u can spice it with some salt if you want -then cover fully with remaining rice - saving 3 tbls - stuff the eggs in and spread the lemon/colour over it.



- sprinkle dhania, cover with remaining rice and the fried onions if using



- using a muslin cloth, cover the rice and put the lid on



- let the damm come, uncover, dish out....



- .... serve and enjoy :)
